My best memories were of La Grenouille was when she welcomed us from pouring rain and soaked to the bone,so graciously. My son met me there for the most memorable and wonderful drink at the bar and delicious dinner.

The waiters refilling champagne bottles with ginger ale and grenadine, and pouring it with complete solemnity. Nobody breaking character for a child.
That's the whole job, isn't it.
